UltraGrain® Soft Whole Wheat Flour is formulated with lower protein which means less gluten-forming potential, resulting in a more tender and delicate texture. It's ideal for applications like cakes, pastries and cookies. UltraGrain® Soft Whole Wheat Flour is 100% whole wheat flour that offers whole grain nutrition with the taste, texture and appearance of white flour. Made with specially selected white wheat that's naturally milder, sweeter and lighter in color than red whole wheat, it's carefully milled using a unique method that retains all the whole grain nutrition, while achieving the performance of white flour. A good source of fiber, all our UltraGrain® products meet the USDA definition for "whole-grain rich."
