Dark Cocoa Replace, our newest extension in our cocoa replacers solutions, was developed based on your needs - customers who asked for a dark cocoa solution for products where deep cocoa color is required. We heard you and brought Dark Cocoa Replace to market.  
 
Recognizing the complexity of cocoa flavor and the challenges to replicating it in a replacement product, Ardent Mills has validated our cocoa extenders through comprehensive sensory trials with both trained panels and consumers. Results from both sensory screening trials by highly trained sensory experts and from consumers demonstrated that both Cocoa Replace and Dark Cocoa Replace closely match cocoa powders in sensory experience and acceptability, making them viable alternatives to cocoa in baking applications.*

Applications

  • Cocoa Replace can replace up to 25% of cocoa powder in applications inluding chocolate cakes, brownies, cookies and muffins.
  • Dark Cocoa Replace can replace up to 90% of highly alkalized cocoa powder portion in applications using cocoa powder blends, including dark chocolate cakes, brownies, cookies and muffins.
